Easy Pumpkin Pancakes with Garnish

Now if you are like me nothing says Autumn more than Pumpkin! I literally can get enough! Pumpkin breads, pies…oooh and don’t forget my favorite pumpkin Pancakes! Now, if you scour the web it is full of overly complex recipes, but if you know me you will know that I am pretty easy (Insert your own joke here) and I like easy recipes that taste really good. I have tinkered with this recipe over the years and here is the version I find works best. So without further ado here is my cheater version of authentic but Easy Pumpkin Pancakes!

IMG_2984 The easiest Pumpkin Pancakes Ever!

  • Prep Time: 10m
  • Cook Time: 20m

Ingredients

  • 4 cups Aunt Jemima Complete Pancake Mix
  • 2 cups Pumpkin Puree
  • 2 1/2 cups Water (Slightly more or less depending on how thick or thin you like your pancakes)
  • 3 tablespoons Pumpkin Pie Spice
  • 1/4 cup Splenda **Totally optional But I like my batter a bit sweeter so I can use less syrup (pure sugar or any other granular sweetener will work here too but I choose Splenda because I’m a calorie counter ☺)

Instructions

  1. Mix together all the dry ingredients first (Pancake batter, Pumpkin Pie Spice & Sweetener)
  2. Mix in the wet ingredients ( Pumpkin Puree and Water)- Here is the point where you can mix in a bit more water if you prefer a more crepe like thickness
  3. Mix until you get a typical pancake batter consistency
  4. Spray the griddle or pan with a Non-Stick cooking spray
  5. On the griddle they go on a medium heat (I typically aim for about a 4-5 inch diameter Pancake)
  6. When you notice little bubbles start to form, I spray a little more Non-Stick cooking spray on the Un-cooked side- And Flip!
  7. Check the underside after about a minute or so, and when I see they are golden Brown I take them off the heat and onto foil for cooling ( Or right onto your plate with maple syrup works too)

Ok here is the best part about this recipe. Are you ready!? These pancakes Freeze amazingly well!

**Cajun-food -Tip- this recipe makes about good sized 24 pancakes (These freeze amazingly for quick early morning breakfast options) but you could easily scale the recipe back for however many pancakes you need**

**cajun-food-Money Saving Tip** Freezer safe bags can be pretty expensive. I place these pancakes 2 at a time into cheap sandwich bags. The when they are all bagged I load them all into a large Freezer safe bag and date them.

So when you wake up (Or go to sleep) in the mood for pumpkin pancakes just take 2 pancakes out of the bags, place them on a microwave safe plate and microwave for about 90 seconds (Depends on your microwave) Garnish with some syrup or powdered sugar or blueberries, or whipped cream or all of the above…and Boom, My Easy Pumpkin Pancakes Recipe!

I will admit that it was pretty late in life that I first had a taste of Hummus. It just wasn’t a food that I was ever exposed to as a kid and certainly wasn’t something my mother would ever dare attempt to prepare at home! When I finally  tasted it for the first time in my 20’s at my favorite little Mediterranean restaurant in New Orleans I was instantly hooked! This hummus recipe is the closest I have ever had to the Hummus I fell in love with and most importantly it’s pretty easy to make!

Now Hummus is one of those foods much like Lasagna and Pizza (Or King cake and Gumbo for my Louisiana people). Everyone has their absolute favorite place to get it and everyone is 100% certain that their favorite is the absolute best in the world! It’s all about your personal pallet. For example, if you aren’t into spicy foods like I am then leave out the jalapeno and you still will be left with a savory Hummus that is both delicious and healthy.

Now I will warn you that this may not be the authentic Hummus that I experienced in my travels to Greece, but it is darn good and may I say that I like this version better! Bon Appetite!

JALAPENO HUMMUS

  • Prep Time: 20m
  • Total Time: 20m

Ingredients

  • 32 ounces CHICKPEAS AKA GARBONZOS (I DO 2 CANS OF THE LOW SODIUM VARIETY)
  • 1 teaspoon DICED JALAPENO (MORE IF YOU DIG THE HEAT)
  • 2 tablespoons EXTRA VIRGIN OLIVE OIL
  • 1 teaspoon MINCED GARLIC ( 1 CLOVE)
  • 1/2 cup WATER

Instructions

  1. **OPTIONAL** REMOVE THE SKINS FROM THE CHICKPEAS ( THEY COME OFF WITH A "PINCH")
  2. PUT THE REMAINING INGREDIENTS IN A FOOD PROCESSOR OR BLENDER FOR ABOUT 2 MINUTES
  3. SERVE WITH THE HUMMUS SPREAD AND SOME MORE DICED JALAPEÑO AND A PINCH OF BIT OF OLIVE OIL IN THE CENTER (SEE PHOTO)
  4. DEVOUR!

Ok, here is where we come to a crossroad. One must answer an age old question when making Hummus at home…to Peel the small skin off the Chickpeas or to not peel the chickpeas!?!?! I will say that this is totally optional and a matter of preference and how much time you have. I have done both ways and the taste is exactly the same. The only difference is when you take the time to peel the peas the texture will be a lot smoother and more like a restaurant quality.

Now I will tell you that MOST people think peeling the thin clear shell from the chickpeas absolutely sucks! They hate it! I will also tell that I am NOT one of those people! It’s rather relaxing if you ask me! I just put something good on TV and I can just pop those little suckers off without even looking. It only takes a little “pinch” and it pops right off, and don’t worry…you get better and faster at it about half way through!

** cajunfood4thought Kid tip! If you have a little one who enjoys helping out in the kitchen then this is a perfect spot! Sometimes those little fingers are better than ours on getting those shells off!

About Half way through you will feel like Henny Penny baking bread… Who will help me peel the chick peas? vs. Who will help me eat the yummy Hummus? Just Power through! (Or say forget it and skip to the next step)

Now here comes the easy part, just pop all the ingredients into the food processer or blender! (If you’re in the market here is the one that I prefer) Whip that baby into it creamy smooth paste, and…try not to eat it all before you can share some! When I’m serving this Hummus I like to plate it and create a little levee effect with the hummus and in the middle of the “bowl” put a little more olive oil, the diced jalapenos and don’t forget some of the delicious jalapeno juice!

Garnish with a little paprika or parsley if you’re feeling extra fancy and you’re all done!
